With sites in South Yarra and Docklands, the A25 pizzeria brand is extending its reach, opening a new site in the heart of Melbourne’s CBD.

Located on the corner of Lonsdale Street and Hardware Lane, A25 will have a focus on Italian coffee and on-the-go breakfast items, targeting CBD workers and residents. Italian pastries like custard bombolonis are available, as well as savoury items like paninis filled with pancetta and egg; and pancetta and Italian apple slaw.

Restaurateur Remo Nicolini (pictured below) has curated a ‘traderne’ menu together with Raymond Capaldi. The duo has experimented with fermentation methods to produce pizzas that are yeast free, light and easy to digest. Each week, the team will highlight a different type of flour, creating dough with alternatives including spelt, kamut and enkir flour.

Pizzas available include the popular Bim Bum Bam with chili prawns, pancetta, truffle porcini, broccolini, truffle aioli and parmesan snow, and there are four Nutella inspired desserts on offer, including Black Forest with a Nutella base, topped with cherries, blackberries, raspberry dust, fior di latte ice cream, strawberry chocolate flakes and injected with strawberry puree.

The new A25 site will have capacity for 50 guests indoors and another 50 outside.

“A25 CBD will be an all day Italian eatery with some interesting surprises. I’m looking forward to delivering a bigger focus towards healthy, easy-to-digest pizza dough and authentic homemade pasta,” Nicolini said.

A25 is located at 399 Lonsdale Street Melbourne and will open to the public on Thursday, 12 May 2016.
