Chefs from some of the country’s best Japanese restaurants including Sokyo, Sake, Cho Cho San and LuMi Bar and Dining will unite for a one-off dining experience later this month.

Sokyo 8 will be hosted at Sokyo restaurant in Sydney’s The Star on 15 September, where chefs will include Chase Kojima (Sokyo), Federico Zanellato (LuMi Bar and Dining), Nic Wong (Cho Cho San), Kerby Craig (UME Restaurant), Tomoyuki (HaNA Ju-Rin), Min Kim (Sak Double Bay), Adam Lane (Kiyomi, Jupiters Hotel & Casino) and Takashi Sano (Sokyo).

The event will consist of a collaborative seven course degustation menu made with locally sourced produce and served with matching wines and sak. Each visiting chef will serve one bespoke course, while chef Kojima will collaborate with chefs from Sokyo and Kiyomi for the remaining two courses.

Menu highlights will include David Blackmore oyster blade with homemade nuka pickles, miso by Cho Cho San’s Nic Wong; and sea urchin and aged tuna sashimi with roasted nori and white soy from Sak Double Bay’s Min Kim.

Kojima, executive chef, Sokyo and Kiyomi said “It’s an honour to invite some of Sydney’s most talented Japanese chefs, and my good friends, into the Sokyo kitchen to imagine and create a very special dining experience that celebrates Sydney’s cutting-edge Japanese dining scene.”
