John Lawson, executive chef of the Crown’s No.8 by John Lawson will be taking redesigning the menu at Flemington’s exclusive Chairman’s Club.

The menu will be served for the duration of the 2015/2016 racing season commencing on Turnbull Stakes Day this Sunday (4 October).

“John will oversee the design of the menu, which will be in line with his commitment to showcasing local suppliers and their produce,” says VRC chief executive Simon Love.

Lawson, who has worked across the world at a number of acclaimed restaurants including a three and a half year tenure as head chef of Gordon Ramsay’s Maze at Crown Hotels, piloted the successful reopening of Crown’s restaurant No. 8. Under his direction, No. 8 by John Lawson at Crown has quickly built a solid reputation as one of Melbourne’s finest dining experiences.

“I’m very excited to once again be involved in the Melbourne Cup Carnival. It’s a privilege to design The Chairman’s Club menu, bringing No.8’s mentality of serving local, fresh produce to Flemington,” said Lawson.

Lawson will appear at The Chairman’s Club during the four-day Melbourne Cup Carnival, comprised of AAMI Victoria Derby Day (31 October), Emirates Melbourne Cup Day (3 November), Crown Oaks Day (5 November) and Emirates Stakes Day (7 November) along with other appearances throughout the racing season.
