Waterloo’s Devon Caf has teamed up with Sydney craft brewers, Young Henrys and Sakenet to launch a new banquet menu that has been designed to pair with beer and sake.

The new ‘La Russo-San’ menu features some of the venue’s Asian-inspired specialties such as lobster spring rolls, agedashi tofu, belacen chicken wings, ribs and sides and mirin-poached pear.

For a more bountiful option, the ‘Miyagi-San’ adds scallops, salmon tartare, sticky pigs tails with bak kut teh glaze, along with additional choices of ribs, crab or chicken and Nasu dengaku miso-grilled Japanese eggplant or mirin-poached pear for dessert.

The new menus drawn on Devon’s head chef Zacharay Tan’s upbringing on the Penang peninsula in Malaysia, fused with modern Australian flavours.

Both menus have the option of a beer a sake matching from Sydney craft brewers, Young Henrys and family-run sake business, Sakenet.

Young Henrys has grown from strength to strength since opening its Newtown Brewery in 2012 and become well-known not only for its boutique beers, but also for its brewing philosophy which draws on low-impact brewing.

Sakenet, a family-run business with locations in Sydney and Melbourne connects with the traditional ‘Saka-gura’ sake makers in Japan to import premium rice wines to Australia.
