Scottish-born Purnell brothers Gordon and Ross will soon make their debut in Sydney’s hospitality scene with the launch of two new venues.
The duo secured a dual-level location in the Quay Quarter Lanes precinct and have created two distinct concepts: Disco Pantera and Tigra which will open this month on Young Street.
“Our love for hospitality is in every detail,” says Gordon. “We want to create a space where inclusivity is paramount and everyone is welcome to create memories and have an unforgettable time.”
Tigra bar and eatery is located on the ground floor and will serve snacks based off Spanish and Japanese cuisines as well as a snappy aperitif offering.
“We were inspired by our favourite spots around the world, places like Barcelona and Tokyo where unexpected flavour combinations and elevated ingredients come to life in a relaxed but electric atmosphere,” says Ross.
The co-owner is behind the dishes guests will find on the menu, which will list snacks and small plates to share. Expect blood sausage with gremolata and red chilli as well as scallops with bottarga, crudites, and Koshihikari rice with salmon roe and white soy egg yolk.
There will be 20 wines available by the glass as well as cocktails and aperitifs.
Head up the stairs to find cocktail bar Disco Pantera, which has been modelled off a 70s New York concept.
The space has a dedicated dance floor and will bring in different DJs throughout the week.
Cocktails celebrate seasonal produce with the menu set to go live with a Chimichurri Margarita, Alpine Sazerac, and the Cleopatra Martini which is made with goat’s milk-washed gin and blue spirulina oil.
There’s also a house Pantera Creaming Soda which is based off a classic milk punch with a hint of essential oil.
Official opening date of both venues to come.
