Pablo Tordesillas, former head chef at now-closed Brisbane restaurant Ortiga, has been appointed head chef of Sydney’s The Resident, a new venue from the Lotus Group.
The Resident will offer a Mediterranean inspired menu, showcasing Tordesillas’ passion for Spanish cuisine, with small plate sharing in a relaxed setting.
During the day the caf-come-bakery will serve fresh bread, pastries, salads and packed picnic lunches, while a sister bar will offer customers before and after dining options.
A drinks list compiled by sommelier Annette Lacey, the 2014 winner of the Vin de Champagne Awards’ Professional category, will feature both Spanish and Australian wines to match Tordesillas dishes.
White and green marble interiors designed by DS17 will complement the views of Hyde Park.
The Resident will open soon at 18 College Street Darlinghurst.
