Saporium, a new urban food market in Rosebery’s The Cannery, is due to officially open in April.
Housed in a 4,500 square metre revived warehouse, Saporium will welcome more than 12 food providores and artisans including an organic grocer, butcher, baker, coffee roaster and dessert bar, plus three new eating houses and a cooking school.
Opening over three stages, Saporium will sit alongside fellow The Cannery residents including Archie Rose Distilling Co., Koskela, The School, Black Star Pastry and Da Mario.
Stage One tenants (already open for business) include Grain Organic Bakery, Zeus Street Greek, 5th Earl and The Choc Pot.
Stage Two tenants, due to open in April, include Wholefoods House, an organic and wholefood supermarket; Vive Cooking School; and Kingsmore Meats, an artisan butcher sourcing naturally reared, grass-fed and organic local meats, complemented by a range of house-made smallgoods.
In September, Stage Three businesses will launch, including Welcome Dose Specialty Coffee Roasters, where artisan coffee will be roasted, sold and served onsite. Additional tenants will include a deli, an organic and biodynamic wine shop, a chef and kitchenware supplier, a florist plus other food purveyors and smaller food kiosks.
“Saporium has been designed and crafted as a new style of urban food marketplace for Rosebery and Green Square, home to one of Australia’s fastest growing and most progressive inner city communities,” said Peter Mystriotis, project director for Saporium.
