Fresh Catering has announced that it will be opening a new restaurant and retail establishment at The Mint in Sydney.
The announcement comes just after the caterer won the tender to become the exclusive venue caterer and operator for The Mint and the Justice and Police Museum. The restaurant, named No. 10 Bistro, will be located in the home of the pre-existing Bistro Mint restaurant on level one while the No. 10 Store, an all-new espresso, flower and gift concept store will be located at the Bullion Room on the ground floor.
The design of the two venues will be overseen by Kristie Paul of Inochi Design Life whose acclaimed designs include The Governors Table at the Museum of Sydney.
The kitchen will be headed up by chef Simon Collier of Vaucluse House Tearooms. Collier brings over 20 years’ experience to the role and has created a menu of contemporary bistro style food with a focus on high quality local produce.
Examples of dishes include smoked salmon super bowl of avocado, brown rice, quinoa, beetroot and horseradish crme fraiche; fettuccine con fungi with portobello mushrooms, porcini, parmesan and thyme; the Italian snitty of crumbed free range chicken scaloppine with Italian coleslaw and lemon; Fritto Misto comprising crispy local catch of the day, king prawn, zucchini flowers and malt vinegar spray; and steak frittes comprising O’Connor’s rib eye, shoe string fries and Cafe de Paris butter.
Along with flowers and gifts, No. 10 Store will also be serving up coffee, breakfast, lunch and afternoon tea items including freshly baked muffins, toasted paninis and cakes.
Fresh Catering’s executive chef, Geoff Haviland will be heading up functions and events at both The Mint and Justice & Police Museum. Haviland has over 15 years of experience in the hotel and restaurant industry including key roles in Michelin star rated restaurants such as French inspired L’Ortalan in the United Kingdom (2 Michelin stars), The Schweizer Stub in Germany (2 Michelin stars), and The Boathouse in Canberra.

No. 10 Bistro and No. 10 Store are slated to open on Wednesday 3 February, 2016.
