Applejack Hospitality, the Sydney-based hospitality group behind The Butler, Bondi Hardware, The Botanist and SoCal will be opening a brand new bar this November, Della Hyde.
Located on Sydney’s Oxford Street, Della Hyde will mark the fifth Applejack venue to open in four years.
The theme of Della Hyde will be that of luxe lobby bars of the grand hotels of the past with an Applejack-style twist. The bar will have a strong focus on opulent interiors, great service, cocktails and bar snacks.
“We like the idea that the Della Hyde site was ‘apparently’ once a grand hotel situated on Hyde Park and named after the famous American actress Della Pringle,” says Applejack co-owner Hamish Watts.
“We’ve taken design inspiration and a bit of artistic license from that- we reckon it would have had a touch of opulence based on the Hawa Mahal or 'Pink Palace' in Jaipur, India and that maybe it was a member of the revered 'Society of Crossed Keys'. That’s our story and we’re sticking to it!”
The bar will be expansive with a capacity for 150 guests. The interior will feature brick columns with ornate arched beams, luxurious Chesterfield banquettes, period feature lighting and mirrors, and timber and tile floors, all in tones of pink and grey with brass finishes.
The drinks menu has been created by Della Hyde’s general manager Joe Worthington (formerly of SoCal Neutral Bay) and Applejack Group bars manager Lachy Sturrock.
The list boasts both classic and modern cocktails, including cold-drip espresso aperitif-styled cocktails served over ice.
The food menu – created by Group Executive Chef, James Privett – features small and large share plates with both European and North African influences.
Small dishes include pea and pancetta croquettes with harissa mayonnaise, with more substantial offerings comprising spiced lamb, olive, onion, spinach and labna pizza; and paprika chicken skewers with parsley and barley salad.
Della Hyde is located at 34 Oxford Street Darlinghurst, Sydney and will officially open on 25 November, 2015.
