Chase Kojima, chef at Sokyo in The Star, is about to open a casual pop-up restaurant in the casino’s Caf Court.
Sokyo Ramen by Chase Kojima will open on 10 September and will serve bowls of ramen for lunch and dinner, seven days a week, until November.
Also on offer will be Japanese street food dishes including marinated sake soy chicken karaage with spicy mayo, mixed greens and yuzu dressing; yuzu sorbet; and freshly squeezed juices.
“Ramen noodles are one of my all-time favourite Japanese street foods and Sokyo Ramen is a great chance to do something different and give Sydney a taste of Sokyo like they’ve never tasted before,” Kojima said.
Earlier this month Kojima announced Sokyo will host Sokyo 8 on 15 September, where leading Australian chefs will unite for a one-off event. Participating chefs include Federico Zanellato (LuMi Bar and Dining), Nic Wong (Cho Cho San), Kerby Craig (UME Restaurant), Tomoyuki (HaNA Ju-Rin), Min Kim (Sak Double Bay), Adam Lane (Kiyomi, Jupiters Hotel & Casino) and Takashi Sano (Sokyo).
The event will consist of a collaborative seven course degustation menu made with locally sourced produce and served with matching wines and sak. Each visiting chef will serve one bespoke course, while chef Kojima will collaborate with chefs from Sokyo and Kiyomi for the remaining two courses.
