The team behind Bar Liberty will open Capitano in Carlton institution The Beaufort pub.
Owners Michael Bascetta, Banjo Harris Plane, Manu Potoi and Casey Wall have confirmed the venue will open in August.
Capitano will offer Italian cuisine inspired by food Wall has come across in Australia and his time working in New York.
The menu features a rotating selection of pizzas along with pasta dishes that will also change. Lasagne and dry-aged steaks will also be available along with desserts such as the classic tiramisu.
The Capitano kitchen will be run by head chef Blake Giblet, who has previously worked at Melbourne restaurants Movida and Cumulus Inc. and has also spent time in London at 10 Greek Street.
Sommelier and co-owner Harris Plane has curated a wine list of Italian varietals sourced locally and internationally. Italian cocktails and an impressive selection of Amari will also be available.
Capitano will be open seven days days from 5pm until late on weekdays and from 12pm until late on Saturdays and Sundays.
