Cantonese eatery and cocktail bar Mya Tiger has launched at the newly opened Hotel Esplanade in St Kilda.
Ex-Longrain and Lotus Dining chef Sarah Chan is heading up the venue which showcases Aussie favourites packed with flavour.
“Mya Tiger is a place you can come for any occasion and you’ll be comfortable enough to order anything,” says Chan. “There’s a real sense of familiarity and nostalgia with the menu, which works perfectly in a building that has as much history and soul as The Espy.”
Snacks include sesame prawn toast, Chongqing wings, scallop prawn shumai and crispy pork bao. More substantial dishes include salt and pepper tofu, roast duck, pork belly, fried whole market dish, XO pippies and crispy skin chicken. Mango coconut pudding, red bean pancake and ice cream are all available for dessert.
Group bars manager Kevin Peters has worked with Chan to create the cocktail menu which draws inspiration from the food offering. Teas and fruit-forward options reign supreme, with the Beijing Peach (jasmine-Infused Wyborowa vodka, lime and peach) and Chinese 5 Spice Highball (Havana Especial, Pepsi and citrus) two highlights.
Group sommelier Matt Skinner has created a wine list that showcases aromatic whites and lighter reds. Diners are also able to help themselves to craft beer from a self-serve fridge.
