Giorgio De Maria of Fun Wines has joined forces with chef Sarah Cicolini and winemaker Gianmarco Antonuzi from Le Coste to host a series of events at in Sydney (Marta), Hobart (The Agrarian Kitchen) and Melbourne (Osteria Ilaria).
Each event will celebrate Roman cuisine and minimal intervention wines from Bolsena Lake.
Cicolini shot to fame when she opened Rome’s Santo Palato, a 35-seat trattoria, in 2017. The menu changes daily based on what she finds at the markets and what her butcher, Liberati, has to offer. Cicolini has been lauded by critics for her modern but respectful approach to Roman cuisine.
After the first dinner at Marta on Sunday 24 February sold out, chef and owner Flavio Carnevale has opened up the venue for a second night on Monday 26 February.
The menu will be curated by Cicolini, celebrating iconic classics from her restaurant. Dishes will include trippa alla romana, carbonara, porchetta, misticanza and maritozzo.
The wines will be an extended selection of current and back vintages from Le Coste. Their local varieties, including procanico, aleatico, greghetto (a local clone of sangiovese), grown in accordance with the principles of byodamnic agriculture, are vinified without additions, aged in a 500-year-old underground cellar and bottled without preservatives.
A flight of Le Coste wines will be offered as an accompaniment to Cicolini’s food, as will an eclectic selection of varietals by the bottle. The wines originate from the region around the volcanic lake of Bolsena near Antonuzi’s childhood town of Gradoli in Lazio’s north.
