Shannon Bennett’s Melbourne restaurant Vue de monde has announced changes to its chef roster.
Hugh Allen has been appointed executive chef after a three-year stint at Noma with Rene Redzepi in Copenhagen. Prior to joining the Noma team, Allen worked at Vue de monde and for Rockpool Dining Group.
Justin James will continue in his role as group executive chef and work across a number of venues within the portfolio including Jardin Tan, Piggery Café, Iki-Jime, Burnham Bakery and Benny Burger.
“With the expansion of Justin’s role within the group, it makes for a great opportunity to appoint a new Executive Chef at Vue de monde,” says Bennett.
“Hugh is one of Australia’s most esteemed contemporary chefs and we’re keen to tap into his culinary flair and knowledge of the craft following his experience cooking in some of the world’s best restaurants.”
