Steve Anastasiou, the restaurateur behind China Doll and China Lane, is set to open a new dining concept in Western Sydney in mid September 2019, with Ben Haywood as head chef. Chu By China Doll will be located in the new $10 million dining precinct launching soon at West HQ in Rooty Hill.
“As a sister restaurant, Chu by China Doll will echo the pan-Asian flavours of both China Doll and China Lane, while introducing some unique dishes created especially for the West, made with the highest quality ingredients and freshest local produce,” says Anastasiou.
Former China Lane head chef Ben Haywood will lead the team when the new venue opens, working closely with Frank Shek (head chef China Doll) and Kristian Vale (head chef China Lane) to develop the menu.
“Dumplings made fresh daily, Chinese roast meats, locally sourced seafood, aroma, zing and a smattering of signature dishes from our restaurants in the city are just some of the offerings we will bring to the West, along with a few surprises of course,” said Head Chef Ben Haywood.
“A hand selected wine list will be created to complement the menu and like our much-loved sister restaurants, everything will be designed for sharing and enjoying.”
The 200-seat space will be designed by Bianca Fraser from The Unlisted Collective, inspired by 1940s Shanghai and referencing glamour and theatre through a rich palette of colour and materials.
Another five casual eateries set to open in the West HQ precinct in next sixth months.
West HQ CEO, Richard Errington, says the calibre of hospitality operators choosing the precinct for their next venture is proof of West HQ’s appeal, and a sign of a bright, cosmopolitan future for Western Sydney.
