Acclaimed chef Stephen Nairn and award-winning bartender Orlando Marzo have teamed up to open Omnia in South Yarra under LK Hospitality.
The pop-up concept is set to open its doors on 7 June, with the venue doubling as a European bistro and a cocktail bar.
The dining room can accommodate 36 guests, with the Garden Bar located at the rear of the restaurant.
Nairn has designed a menu that draws on his classical training, with menu items including gougere with chive cream, steak tartare with smoked egg yolk and pomme gaufrettes and whole founder with brown butter, lemon and capers. The chef will be joined in the kitchen by pastry chef John Demetrios (Vue de monde) and Sam Homan (Iki Jime).
There will be more than 150 Australian and international wines on the menu along with an impressive cocktail menu created by Marzo, who was named World Class Bartender of the Year in 2018, and Lewis Cooke (Black Pearl).
Cocktails draw inspiration from the botanical theme of the Garden Bar, with options including the Lemon Myrtle (lemon husk, Tanqueray Rangpur) and the All Spice (banana, Blanc de Blanc and citrus oil).
Nairn and the culinary team will be working on-site at Omnia until the restaurants in the Capitol Grand development open later in the year.
