St Kilda’s Prince Public Bar will open this December, marking the final stage of The Prince Hotel’s revival.
Executive chef Dan Hawkins and head chef Dan Cooper have created an approachable menu for breakfast, lunch and dinner. Think classic pub counter meals along with daily changing rotisseries offering the Prince Signature Roast series.
Little Prince Wine will be introduced in February 2020, specialising in boutique and premium wines, with a particularly focus on Burgundy. Bottles will be available for purchase to takeaway or taste on-site in the wine bar or underground cellar. An in-store deli will supply a limited selection of pre-prepared meals.
The Ryan family commenced reworks on The Prince Hotel in 2016.
The design — by IF Architecture’s Iva Foschia — pays homage to the bar’s Art Deco heritage and St Kilda’s colourful character, reimagined through a
modern lens.
The entire ground floor has been opened up, with a long oval front bar reinstated to its original location, alongside an expanded kitchen and spacious dining areas. An internal staircase has been reintroduced, connecting the bar directly through to the Hotel Lobby and Prince Dining Room.
As well as Prince Public Bar and Little Prince Wine, the venue hosts a wide array of offerings including the 39-room hotel, restaurant Prince Dining Room, Aurora Spa and the Rain Room, located on the rooftop.
The Prince Public Bar will be open from 7am to late seven days a week.
