Ezard alums Chris Lerch, Ned Trumble and Keat Lee have come together to launch their debut venue, Lagoon Dining.
The team met during their time at Teage Ezard’s fine dining institution, where Lerch was a front of house supervisor and Lee and Trumble worked as apprentices in the kitchen
Slated to open in early November, the 80-seat restaurant is located in the Melbourne suburb of Carlton and will largely revolve around Chinese cuisine.
“We want Lagoon Dining to be an eatery that is loud [and] fun.” says Lerch.
“The food will be informed by the wonderfully diverse and nuanced culinary traditions of China, and its various interpretations around the world,” adds Lee and Trumble.
Sommelier Ben Skipper has curated the beverage program around the principles of inclusivity and affordability. Wines, beers and spirits will be sourced locally and abroad and revolve accordingly.
Lagoon will feature a private dining room, 11-seat bar and dining room decked out with banquettes.
The restaurant will operate Monday, Wednesday and Thursday from 5pm-11pm and Friday, Saturday and Sunday from 12pm-11pm.
