Andrew McConnell’s Trader House Restaurants has added a new restaurant to the group’s Melbourne portfolio.
Gimlet at Cavendish House is described as a cocktail bar and dining room inspired by historic restaurants found in London and New York.
“Is there ever a right time to open a restaurant?” McConnell posted on Instagram. “I am so proud of the team I have been fortunate to work with to create something unique for Melbourne.”
The space encompasses a luxe French marble bar, dining rooms on the upper and lower levels and a private dining area.
Diners can order everything from oysters and snacks to seafood salad, dry-aged duck and a signature club sandwich.
Cutler & Co alum Allan Doert Eccles has been appointed head chef, and says the culinary direction leans towards European and American influences.
“A bit of old world mixed with new world sensibility,” says Eccles.
Australian and European wines will also anchor the drinks front, as curated by beverage director Leanne Altmann.
At the bar, classic cocktails, wine and non-alcoholic options are on offer, with McConnell encouraging the public to enjoy a great pleasure: “There’s a time to get dressed up and have cocktails.”
Gimlet will open seven days from noon (9am on weekends) until late, but will first open to the public from 3 July for a preview of lunch and dinner events.
