Vietnamese restaurant Bau Truong will launch a fourth outlet in late July, opening in Harbord Diggers on Sydney’s Northern Beaches.
Joining AcquaFresca by Pilu, Teddy Larkin’s Seafood and Steakhouse restaurants and DD Collective café, Bau Trong will bring its signature refined Vietnamese dining to the Freshwater location.
The Cabramatta institution was founded 3o years ago, with the aim of taking diners on a journey through a traditional Saigon marketplace.
Owner Michael Thai says his 70-year-old mother Bac Cang Nghieu is behind the menu, with several adjustments made to the offerings available at the business’ Cabramatta, Darling Square and Mounties locations.
“The delicacies served at all Bau Truong restaurants are safely guarded recipes which stem from the fond childhood memories of my mum, a Vietnamese migrant,” says Thai. “Her strong desire to perfect recipes inspired by her memories of old Saigon and her grandmother’s cooking, is what stimulates Bau Truong’s success. We are excited to be part of Harbord Diggers and bringing authentic Vietnamese food to the Northern Beaches.”
Specialty dishes include golden fried soft-shell crab in a fruit tamarind sauce and double-boiled five-spice duck in a rich oyster sauce. Sweet dishes are also on the menu. Think banana spring roll or the jackfruit shake.
