Sydney’s Applejack Hospitality will open a new cafe and bar in Wynyard, dubbed Hester’s.
The concept completes the group’s ‘Wynyard Precinct’ footprint on Carrington Street, which includes Bopp & Tone restaurant and June’s Shoppe.
“We wanted to create an intrinsically Sydney experience within a unique and distinctive setting,” says Applejack Co-Founder Hamish Watts.
Hester’s is slated to open on Wednesday next week with Bopp & Tone recommencing trade on Friday.
The venue will open from 7am until 3pm and offer Gabriel coffee and the usual breakfast dishes alongside Mediterranean-inspired cuisine for lunch.
Bopp & Tone head chef Sa Va’afusuaga has curated the menu, which includes seared tuna nicoise, a wood-fired chicken club, Bopp’s burger and salt and cod fritters.
“Food influences come from our chef’s passion for Mediterranean food and philosophies that translate so well with Australian ingredients and the Aussie way of life,” says co-founder Ben Carroll.
Hester’s will open its doors from 12 August.
