Sydneysiders are in for a treat with the launch of Tokyo Lamington in Sydney’s Market City.
The concept is the brainchild of former Black Star Pastry chef and N2 Brunch Club founder Eddie Stewart and Min Chai, founder of N2 Gelato.
Stewart and Chai tested the concept in Singapore and Tokyo before deciding to launch a flagship location in Sydney.
“Tokyo Lamington is not what you expect,” says Stewart. “It was born out of our love for Japan and my memories of baking with my grandmother here in Australia.”
Flavourways include pandan, ube, lemon myrtle, black sesame, matcha and milk tea.
The concept also has the classics covered, with fairy bread with popcorn butter, Ferrero, lemon, lime and bitters and chocolate available.
Tokyo Lamington opens its doors on level three of Market City at 11am today.
