Ovolo Hotels has announced all its restaurants in Australia and Hong Kong will go vegetarian for one year.
Venues across the country including Za Za Ta in Brisbane, Canberra’s Monster Kitchen & Bar and Sydney’s Mister Percy have all overhauled their menus to hero vegetables.
“We want to be conscious about what we are consuming and practice environmental sustainability as best as we can, as this leads to a larger impact on humanity, not just the environment,” says Ovolo Group Founder and CEO Girish Jhunjhnuwala.
Paul Wilson (Geranium in Denmark and Orpheus Island on the Great Barrier Reef) has joined Monster as executive chef and has plans to implement a kitchen garden and showcase produce that’s been fermented and pickled.
Za Za Ta’s Executive Chef Roy Ner launched his Tel-Aviv-inspired vegetarian menu in August, which covers small meze plates, a charcoal-heavy mains selection and traditional desserts.
Meanwhile, Mister Percy in Darling Harbour is morphing into an Italian wine bar, with antipasti and pastas revolving daily.
