Saint Peter and Fish Butchery’s Josh and Julie Niland will welcome guests to Charcoal Fish in Sydney this week.
The new venue will open on 15 September on New South Head Road in Rose Bay after the concept was announced in May.
“We can’t wait to see those of you within our 5km area,” reads an Instagram post. “Thank you for your patience and support over the past month.”
Charcoal Fish will emulate a charcoal chicken shop and hero one type of fish: Aquna Murray cod from Griffith.
“We have always championed diversity in the fish we use, but Charcoal Fish is about being dynamic and diverse with one fish,” reads a statement from the pair.
“By focusing on Murray cod, we will be able to put more effort and attention into sustainability, perfecting cooking methods and our hyper-seasonal salad and vegetable options.”
The offering will see the fish cooked in a range of applications from classic battered and fried to grilled on the barbeque and served with sour gherkin, Olsson sea salt and Primo Estate extra virgin olive oil.
Anticipated sides cover Murray cod fat crispy potatoes with rosemary and garlic and BBQ peppers with Arbol vinaigrette.
A range of bottled cocktails from Re Bar will be available, including a bespoke Old Fashioned which will feature Murray cod fat salted caramel.
Charcoal Fish will open from 12pm to 9pm Wednesday to Sunday.
