Hospitality veterans Peter Fischer and Simon Rose-Hopkins are set to open the doors to Southern-inspired bar Jolene’s on York street, Sydney.
The venture draws inspiration from Rose-Hopkins’ travels to Nashville, Tennessee.
“I’ve had some amazing experiences during my travels of the US,” says Rose-Hopkins.
“Walking into a bar and within five minutes I’m friends with everybody and being told the city’s best places to eat/drink. I even had a bartender drive me to Jack Daniel’s and back the next day after meeting them the night before.”
The beverage program aims to bring a fresh approach to bourbon, rye and Tennessee whiskey and showcases a range of spirits through non-traditional flavour pairings.
Patrons can expect Southern classics on the menu with three kinds of hotdogs, deep-fried mac, cheese balls and nachos on offer.
The team are also collaborating with the creators of Young Bloods in Perth to train newcomers to the industry and bring a bimonthly rookie-only cocktail competition to Jolene’s.
Fischer aims to apply his former experience as Bacardi brand ambassador to the venue.
“When I was working for Bacardi, it was always a goal of mine to share knowledge as much as possible, that won’t stop now I’m running a venue,” he says.
Jolene’s will welcome guests from late February and will open from 4pm until late Tuesday to Saturday.
