The cocktail bar and listening lounge opens its doors this week as part of the recently launched Saint Hotel in St Kilda.
It’s all about music, cocktails and snacks at the new offering, with a bespoke sound speaker set up by Pitt & Giblin who also worked on Waxflower and Caretaker’s Cottage.
“It’s not a nightclub and it’s not a bar. More so, Stellas is a place to celebrate talent – behind the decks and behind the bar,” says Mrinal Beekarry, general manager of Saint Hotel.
“The talent we book will be carefully considered just as the specialty cocktail and food menus have been.”
Stellas’ food offering features light snacks such as oysters and house-pickled crudités, plus smaller share plates including Mayura Wagyu tartare and Macedon Ranges duck croquettes.
There’s also charcuterie and cheese plates, plus a Mooloolaba prawn sando for those looking for something larger.
Drinks wise, Bar Manager Roy Das Neves has crafted Stellas’ signature cocktails which take a seasonal focus to showcase local ingredients.
“I’m hoping to achieve a zero-waste policy at Stellas with a produce-driven menu that utilises every component of an ingredient in a clean and minimal way,” says Das Neves.
Head Sommelier Aleks Jeremic has also put together a wine list highlighting local Victorian winemakers, plus a range of beers, ciders, spirits and seltzers.
There’s a rotating roster of local and interstate DJs, who will take to the decks each Friday and Saturday evening until late.
Stellas sits adjacent to the Saint Hotel’s Bar 54 on the first floor, and boasts a more vibrant, bright setting than the below Saint Bar and Dining.
