The Sydney bar has welcomed Elijah Attard (Yellow) to the team to create a new bar food offering for the venue.
Attard’s menu follows the theme of the venue’s recent cocktail offering Mirage, and are easy-to-execute dishes for busy services.
“Maybe Sammy has a world-class reputation for delivering an innovative cocktail experience and the food should be just as engaging,” says Attard.
“The ‘expect the unexpected’ theme of the Mirage cocktails is something I’ve carried through into the food menu, taking classic flavour combinations or recognisable dishes and transforming them into something that feels fresh and interesting.”
Some of the highlights across the menu include oyster mushroom ceviche, carpaccio strips of melon and prosciutto, kingfish ceviche with pomelo, and house-made quinoa crumpets with either sunflower or shiitake puree.
On the sweeter side, there is also the eucalyptus marshmallow, wattle seed fudge and a house-made pine nut ice cream with cinnamon myrtle granola.
The venue’s truffle toastie, and $2 oyster Saturday deals will still run alongside the new menu.
Attard’s new menu is available now, and is served daily until late.
