Johann Vanier has joined The Langham team after working across Michelin-starred venues in France, and more recently at Sydney’s Public Dining Room and De Toni Patisserie.
Vanier will be showcasing his French roots with the new Taste of France afternoon tea experience set to launch on 1 June.
Held in the venue’s Palm Court, the afternoon tea will feature four sweet and savoury desserts starring local Australian produce with skilful French techniques.
Some of the dishes on the menu include a croque madame with Heidi Farm gruyere cheese and quail eggs alongside Vanier’s modern take on a tarte tatin.
“My personal recommendation is the Tarte Tatin: the new interpretation of the quintessential French dessert is made using Queensland pineapples, nestled in a buttery pastry shell, as opposed to the traditional French recipe made using apples,” says Vanier.
The Langham, Gold Coast General Manager John O’Shea says Vanier’s appointment will fall in line with the venue’s focus on French Patisserie.
“The Langham brand has become synonymous with the tradition of afternoon tea, since it was first served at The Langham London in 1865, and the arrival of chef Johann will elevate the experience with the craftsmanship of French Patisserie,” says O’Shea.
“Chef Johann has honed and built his culinary knowledge under the tutelage of some of the world’s finest Michelin-starred French restaurants, and we’re excited to bring this level of sophistication to our heritage afternoon tea offering.”
The Taste of France afternoon tea will run daily throughout June with sittings between 2-5pm.
