Poetica is set to open in September and is the latest venue by the group behind The Charles Grand Brasserie & Bar; Loulou Bistro, Boulangerie & Traiteur, and Tiva.
The venue will be a showcase of cooking with fire with a 15-metre-long open kitchen featuring a Josper charcoal oven and custom wood-burning hearth.
The 120-seat restaurant will also feature an adjoining 40-seat bar and terrace which will host a smaller food offering.
“The concept for Poetica was to create a bar and grill that reflects the refined and relaxed style of contemporary Sydney dining,” says Etymon Projects Director Sebastien Lutaud.
“A welcoming vibe that works as well for entertaining clients over lunch as a dinner with friends or a drink after-work. We’re excited for Poetica to join North Sydney’s growing dining scene.”
Poetica will be spearheaded by Head chef Connor Hartley-Simpson who comes from time spent at The Charles Grand Brasserie & Bar plus the Michelin-starred Gastrologik in Stockholm and Quince in San Francisco.
Some of the dishes set to star include a starter with braised leeks and charred leek tops with nori and Smoke Trap eels, plus Sydney rock oysters with nduja and guindilla pepper cooked in the ancient flambadou technique.
For the proteins, Poetica will be serving up a range of whole sirloins, T-bone steaks, and tomahawks which will find their home in the venue’s dry-ageing cabinet.
There will also be a dry-aged swordfish dish, a whole rainbow trout, and a slow-cooked pork jowl.
“In the kitchen we’re focusing on using incredible local produce, dry-ageing in house, cooking with either charcoal or wood where it works, pickling and fermenting to play around with flavours, and really letting the produce be the hero,” says Hartley-Simpson.
To drink, Etymon Projects Director of Wine Paolo Saccone has crafted a list of around 450 wines with a large Australian offering.
The adjoining bar will continue the Australian focus with a line-up of local spirits, craft beers, and cocktails designed by Director of Bars Jonothan Carr.
Poetica is set to open this September, with bookings open from today.
