One of Sydney’s most-awaited fine diners has confirmed it will open its doors next month.
House Made Hospitality’s Martinez will make its arrive at Quay Quarter Tower and offer diners a menu anchored by flavours from Southern France – think dishes from Provence, Nice, and Corsica.
Lana’s Alex Wong has taken on the exec chef position and is joined by Head Chef Andrea Sonnate who joins from Sagra.
“If you’ve travelled to the south of France, you’ll recognise dishes, flavours, and produce combinations synonymous to the region, so we’ve taken those and reinterpreted them with a contemporary Australian lens,” says Wong.
The pair have put together a launch menu with dishes including a riff on a nicoise which sees raw tuna teamed with egg yolk and petit nicoise vegetables dressed with tuna mayo and white soy as well as grilled scallops with oursinade sauce.
Pasta will also feature in the form of saffron tagliatelle with red mullet, fennel pollen, and roe in a lobster butter sauce.
The venue has been fitted out with an alfresco bar, with patrons able to take a seat and enjoy views of the harbour.
Drinks follow the French theme with classic liqueurs, brandies, and Champagne making the list.
The bar space has its own menu spanning charcuterie and chilled seafood to steak frites and grilled fish.
Official opening date to come – reservations open for breakfast, lunch, and dinner from 12 October.
