Former Rare Hare, St Elmo Byron Bay, and Du Nord Chef Matt Fallon is set to open the modern Australian eatery next month in Victoria’s Mornington Peninsula.
Colt Dining comes after Fallon experienced life-saving brain surgery in 2019 which sparked his decision to move back home to open the restaurant he always envisioned.
The 95-seat Colt Dining will showcase Fallon’s expertise and passion for championing local produce through a flavoursome yet approachable food offering.
“The vision is simple, we want to give Mornington high-quality accessible dining, driven by love for local produce, foraging and growing our own food,” says Fallon.
“Colt’s style of cuisine will be that of a pared-back yet refined dining experience, without labels of fusion or rustic or any other boxes people like to put restaurants in.”
Some of the signature dishes set to star include yabbie toast with native pepper, coal-cooked Otway shitake with pumpkin seed miso, kelp-wrapped barramundi, pressed brisket with black garlic, and roasted celeriac with umami glaze.
On the drinks side, Beverage Manager Zac Abbot will be curating an inventive cocktail offering and explorative drinks list for the venue.
Guests can expect cocktails such as a French oak-aged Sazerac, plus a rhubarb and home-made lemon curd gimlet.
Colt Dining will open on 6 October and is located at 9A Main Street, Mornington.
