Maggie’s Snacks & Liquor will join Brunswick East’s Lygon Street later this month in the former Alehouse Project space.
There’s a stellar team behind the opening of Maggie’s, including Director Nathan Toleman (The Mulberry Group), Beverage Director Alejandro Archibald, Managing Director Kaidee Grzankowski, Executive Chef Scott Blomfield, and Sous Chef Jessica Spooner.
The Maggie’s team are planning an “unpretentious” food and beverage offering, with the comfortable and inviting vibe of your aunt’s living room.
“I want our customers to feel how I feel in my favourite bars; always welcome, thrilled to be on first name basis and even more thrilled when the staff show me something they’re really excited about,” says Grzankowski.
Blomfield will spearhead the culinary offering and hopes to “push boundaries” through featuring an array of local produce in a farm-to-table approach.
The New Zealand-born chef will draw upon the flavours and ingredients of his homeland too with dishes such as ika mata (Cook Island raw fish dish), pickled mussels with paraoa parae (Māori fry bread), and Mum’s apple shortcake.
Maggie’s Snacks & Liquor will also partner with Werribee Community Garden to grow its herbs and vegetables and will donate a portion of profits back to the Common Ground Project.
Archibald will lead Maggie’s drinks offering which will focus around a bunch of seasonal cocktails that champion local ingredients.
Some of the creations set to star include the Margot Robbie with rhubarb, pistachio, vodka, and citrus.
Maggie’s Snacks & Liquor will open late October for lunch and dinner Wednesday to Sunday.
