Hidden speakeasy Brooksy has swung open its doors on George Street in the Sydney CBD.
The 55-seat venue is inspired by the sophistication and fun of the roaring 20s, equipped with velvet curtains, marble counters, and art-deco furnishings designed by Like Minds (formerly known as Guru Projects).
Brooksy hosts a snack menu curated by Executive Chef Hemant Dadlani who has worked across the globe at venues such as Pangkor Laut Resort in Malaysia plus Jade Mountain and Anse Chastanet resorts in St Lucia.
Dishes on the debut menu include glacier 51 toothfish with shiro miso and cucumber salsa; duck a l’orange croquettes; yuzu scallops with ikura and wasabi; and yellowtail ceviche with aji Amarillo and tiger’s milk.
Beverage Director Brendon Hill (The Grounds of Alexandria, Duck Duck Goose) is behind Brooksy’s drink offering which features a line-up of destination-inspired cocktails.
Highlights include the Uluru cocktail featuring green grapes, lemon, Campari, gin and white vermouth; plus the Amalfi Coast-inspired Saluti with house made citrus cello, peach granita, and prosecco.
Guests will also be able to order classic cocktails and peruse a collection of beer, cider, spirits, and wines from both Australia and beyond.
Brooksy is now open from 5pm Tuesday through to Saturday at 19 Jamison Street, Sydney, New South Wales.
