Operator Venues’ Valerie Fong and Randy Dhamanhuri (Operator25, Makan Restaurant, Middletown Cafe) have teamed up with former Cumulus Head Chef James Cornwall to launch Ruby Dining in the Melbourne CBD.
The all-day venue is inspired by the theatreland brasseries of New York and London, offering breakfast all the way through to late-night options.
Cornwall is championing local producers such as Ramarro Farm, Loddon Estate Free Range poultry and duck, Chooks at the Rooke eggs, Stone Axe and Sher wagyu, and Goldstreet Dairy across the menu.
Breakfast is served all-day on weekends and from 7-11.30am during the week with highlights including shokupan French toast and baked eggs with spiced chickpeas and za-atar.
Later in the day, guests can find dishes such as yellowfin tuna crudo with bronze fennel and radish; agrodolce onion tart with goat’s camembert; Margaret River wagyu bacon skewers with pine mushrooms; and the chicken oyster which acts as a one-bite Caesar salad snack.
Ruby Dining also offers an after-dark menu from 3-5.30pm Wednesday through to Friday which features a snack-style menu.
Following the after-dark menu guests can then order from the a la carte or chef’s selection option which serves share-style dishes for $85 per person.
Ruby Dining joins Cornwall’s Tenable Dining group, which also includes Bonny Fitzroy, Young Hearts, and Seville Estate in the Yarra Valley.
Ruby Dining is now open at 1/189 Queen Street, Melbourne, Victoria.
