Prahran’s European inspired gastropub, L’Hotel Gitan, has a new head chef, Rotem Papo.
Managed by siblings Nathalie, Edouard and Antoine Reymond, L’Hotel Gitan opened in 2014, with Papo hired as senior chef de partie not long after.
Rotem was soon promoted to sous chef, and he’s now progressed further, being named head chef.
The menu at L’Hotel Gitan is based on modern interpretations of European flavours, styles and techniques – drawing particularly from France, Spain and the Mediterranean.
“Since his promotion to head chef, Rotem has continued to capture the unique spirit of Gitan. His international background and experience in European cuisine have been the perfect complement to the Hotel, and we feel confident about the direction we are taking with him at the helm.”
The siblings also own Bistro Gitan, and chef Jacques Reymond is in an advisory role across the two restaurants, consulting to both in a business and gastronomic capacity.
