Crown Towers Perth, which opens on 1 December this year, has announced the appointment of Sean Marco as executive chef.
Marco was previously executive sous chef at Crown, and will now lead a team of 120 chefs.
“Right now we are building our team of the finest chefs and finalising the incredible restaurant and banquet menus which will showcase the highest quality produce. We are on the home stretch and we can’t wait to deliver an unforgettable dining experience, the likes of which haven’t been seen before in Perth,” said Marco.
Crown Perth chief operating officer – food, beverage and entertainment, Andrew Hill said “Sean has played an integral role in Crown Perth’s culinary team since 2006 and will now pilot a new era at our resort; responsible for four new restaurants including Epicurean, The Waiting Room, Crystal Club and Crown Towers Pool Bar, as well as banquets kitchens which will cater for more than 3,200 diners per night and an extensive room service menu.”
Originally from the UK, Marco has cooked for Queen Elizabeth II and worked at Michelin starred restaurants.
Marco has also guided the careers of many chefs, and as part of Crown Perth’s training program, seven of its apprentices will join his culinary team in Epicurean, Crown Towers Pool Bar, Room Service, and Banquets Pastry division.
