Adam D’Sylva has taken on a new role at W Melbourne, which is set to open in February 2021.
The Tonka and Coda executive chef has been named creative culinary director of Lollo, a 110-seat restaurant that will revolve around European and Asian cuisines.
D’Sylva will work alongside the hotel’s Executive Chef Jihun Kim to design the menu, which will be anchored by local produce and classic dishes with a twist.
The drinks list is set to hero Australian wines, with 70 per cent of the list showcasing local producers; half of which will be from Victoria.
A range of Champagnes and 35 wines will be available by the glass along with local beers and cocktails.
W Melbourne will also house cocktail bar Curious, Japanese restaurant Warabi and cafe/wine bar Culprit.
