Celebrated chef and author Analiese Gregory has teamed up with Tasmanian distillery Taylor & Smith to launch Honey Gin.
Honey Gin is crafted from honey and beeswax produced from Gregory’s own beehives in Tasmania’s Huon Valley.
The idea came to be after Gregory spent home quarantine tending to her beehives and doing her own cocktail hour with honey she produced.
The decision to work with local distillers Taylor & Smith is something Gregory describes as a “natural choice”.
“I’ve worked with Taylor & Smith before and love their products, integrity and passion for what they do,” she says.
Taylor & Smith is a Hobart-based distillery run by Natalie Smith and Ben Taylor who also produced honey before landing in the spirits game in 2018.
“We have an incredible diversity of flora, and our isolation and strict biosecurity measures have allowed us to maintain healthy bee colonies. So when Analiese approached us to collaborate using her Honey and beeswax it was a wonderful way to reconnect with that part of our story,” says Smith.
“Honey Gin brings to mind the Tassie landscape, all those beautiful native plants the bees have visited, the myrtle and bottlebrush, and hints of paperbark”.
Honey Gin is now available, with 300 signed bottles on sale from Taylor & Smith.
