Executive Chef at Rafi and Applejack Urbnsurf Matias Cillóniz will be leading the culinary offering which will star responsibly sourced seafood, vegetables, and grass-fed meats.
“At Rafi, we focus on serving the best seasonal and local ingredients. Our menus feature fresh produce from small Sydney farms, as well as top-quality seafood, beef, and cheese from across Australia. Each dish highlights the essence of the season and the stories,” says Cillóniz.
Guests can expect seafood such as wild-caught yellow fin tuna from Bermagui, New South Wales; Spencer Gulf kingfish; barramundi from Cone Bay, Western Australia; New Zealand trevally; and East 33 Sydney rock oysters.
Rafi Bar Manager Cameron Freno has curated a cocktail list that champions closed-loop sustainability and theatrical presentation.
The list includes an iteration of the North Sydney cocktail fragola fizz; a sub-zero oyster martini; a mai tai with Sonoma croissants; and a sub-zero burnt butter and pecan old fashioned.
The 165-seat venue will only be accessible via the surf park, and will host a restaurant, bar, and rooftop terrace.
