Charlie Carrington’s Melbourne restaurant Atlas Dining has announced it will be showcasing American cuisine from September.
Known for changing its cuisine every four months, the restaurant will be dishing up Southern-style soul food and American barbecue.
Carrington recently returned from a trip to the South, visiting states including Tennessee, Mississippi, Alabama and Texas. “We’ve come back with an inspired menu, full of character, grunt and soul,” says the chef.
The dining space will be altered to reflect the casual style of the menu, with tablecloths swapped out for deli-style brown paper and Carrington promising the fine dining service will be softened; “while maintaining the quality and standards guests are accustomed to”.
Diners can look forward to a menu that includes fried chicken and gumbo, shrimp n’ grits with wood-oven corn bread and sweet potato pie.
The new concept will launch on 3 September with a $70 set menu and run until Christmas Eve.
