Hospitality figure Tara Sullivan has joined Crystalbrook Collection to oversee a portfolio of 17 bars and restaurants across Australia.
Sullivan has held various roles over her 25-plus-year career in the industry including COO at Lotus Dining Group, experience director at Solotel, and director of operations at The Grounds. She is also the chair of NFP Women in Hospitality.
“What drew me to Crystalbrook was its commitment to creating experiences that are both exciting and accessible,” she says. “The company’s approach to hospitality deeply resonates with me. I look forward to working with the team to create unforgettable dining experiences that reflect our values and vision, while having fun doing so.”
Crystalbrook has restaurants and bars across the country located within its hotels in Cairns, Newcastle, Byron Bay, and Brisbane, with well-known eateries including Paper Cranes, Rocco, Flynn’s Italian, and Forest.
The group has welcomed Sullivan at a time where it is continuing to refine its hospitality offering and focus on developing sustainability measures as well as excellence on the plate.
“Tara’s energy, expertise, and passion for people make her the perfect addition to our leadership team,” says CEO Geoff York. “She understands dining isn’t just about what’s served on the plate; it’s everything from the atmosphere of the venue to engaging with local suppliers to create a unique and memorable experience for guests. With her at the helm, we’re looking forward to enhancing our food and beverage experience in a way that feels fresh, thoughtful, and always welcoming.”
