The spotlight is on pizza and wine at Brighton’s new Italian diner, Cucina & Co.
A 65-seater led by restaurateur Riccardo Bianchini and backed by his partners Peter Aloi of Caf Duomo and Peter Kisvarda, Cucina & Co has a strong focus on seasonality, Mediterranean flavours and classic Italian dishes.
The restaurant boasts a wood fired pizza oven and a selection of 18 different pizzas, crafted by pizzaiolo Leonardo Alfieri. Varieties include favourites like the margherita and marinara as well as the ‘zuccotta’ with cream of pumpkin, buffalo mozzarella, sausage, basil and EVOO; and the ‘diavola’ with San Marzano tomoatoes, mozzarella, spicy Soppressa and basil.
Sommelier Sabino Matera had curated an Italian-only wine list made up of reds, whites and sparking proseccos as well as aperitivi including theNegronis and Aperol Spritz.
Cucina & Co is open seven nights for dinner.
