Cameron and Hayley Cansdell have opened Fish Dining by the Brisbane Water National Park in Point Frederick.
Seafood is the primary focus of the venue, and Cameron has designed a menu that showcases modern seafood with an emphasis on sustainability and seasonality.
The menu is largely inspired by the Central Coast’s sub-tropical environment and Cameron works closely with local fish mongers who are all certified by the Marine Stewardship Council.
A-la-carte and smaller, share-style dishes are available for lunch and dinner, with the venue open from Tuesday to Saturday.
Highlights include fish carry with coconut, fresh turmeric, kaffir and lotus root; king prawn cocktail with Yarra Valley salmon roe; grilled live WA marron and fried snapper wings with cajun spice and mayonnaise.
The husband and wife team are also behind Bombini and Bombini Pizza located on the Central Coast.
Previously, Cameron worked in venues including Bel Mondo, Bistro Moncur, Est., De Bortoli and Bells at Killcare.
