Fast-casual concept Fishbowl is gearing up to open its first Queensland store this week.

The Fishbowl Group launched its first location in 2016 and has rapidly grown to more than 30 venues across New South Wales and Victoria under the leadership of Co-Owners Nathan Dalah, Nic Pestalozzi and Casper Ettelson.

Queensland’s debut Fishbowl store is located in Gasworks Plaza in Brisbane and will open on 16 July, offering its signature menu of customisable bowls.

The concept has become a staple in the fast-casual market, serving more than 10,000 bowls of just one menu item (the OG) per week.

Customers can choose from house favourites such as the crispy chicken or tofu boys and choose from a range of bases such as brown rice, cabbage or soba noodles.

The group sources produce from its own farms and has recently started using ocean-farmed king salmon from Big Glory Bay in New Zealand at a cost of $1 million to the business in the first year.

Dalah spoke at the 2022 Hospitality Leaders Summit in May on the group’s success, discussing the sustainability measures and efficient kitchen practices that have played a key role in Fishbowl’s journey thus far.

“We always try to bring it back to basics,” he said. “Give people really good food and really good value and remember the customer is the number-one priority.” 

The Gasworks store is the first in a string of new locations to come, with 14 venues (including unique concepts) in the works for FY22.
