Fishbowl Founders Nic Pestalozzi, Nathan Dalah and Casper Ettelson are set to launch Fsh Mkt in Sydney’s Bondi.
After the success of Fish Shop, also located in Bondi, Fsh Mkt is primed to be a hit with the local market, with the takeaway concept geared towards delivery and to-go customers.
“It’s the fish shop of your dreams … well at least of ours,” says Dalah. “We’re so excited to bring Fsh Mkt to life.
“It’s been six months of planning, testing and tasting and we can’t wait to finally open and start serving the locals.”
Fsh Mkt will be based on an old-school beachside store, with Executive Chef Joel Bennetts heading up the kitchen.
“The menu at Fsh Mkt will be centered around sustainably caught seafood paired with a rotating selection of condiments, in-season vegetables and generous salads,” says Bennetts.
“We’ll be keeping the menu super fluid, and there’ll be heaps of specials depending on what’s available at the market. As always, expect fuss-free food, bold flavours and ridiculous value.”
The menu will provide a modern take on house favourites such as fish and chips along with a new selection of fish burgers including a prawn katsu option and a flathead ‘Zinger’.
In addition, a market selection of grilled fish such as ocean trout, snapper and barramundi will be on offer alongside rotating salads and veg.
A build-your-own-picnic display will cater to park- and beach-goers, who can pick up freshly shucked oysters, prawns and house-made taramasalata.
The venue will also stock condiments such as tartar sauce, fermented chilli and chilli jam plus house-cured and smoked fish.
Fsh Mkt open 22 October and operates daily from 11:30am-10:00pm.
