Fishbowl founders Nathan Dalah, Nic Pestalozzi and Casper Ettelson are set to open a new venue in Bondi.
Dubbed Fish Shop, the concept is inspired by a traditional eatery with a focus on sustainably sourced seafood.
“We figured – people love food when it’s simple, clean, healthy and feels great,” says Dalah.
“Could we create a new restaurant experience whereby instead of a traditional menu we simply feature market fresh seafood paired with chef driven condiments, salads and vegetables? It’s simple, clean, healthy and delivers insane value.”
Bistrode CBD and Three Blue Ducks alum Joel Bennett has joined the team as head chef, designing a menu that takes cues from Mediterranean and Middle Eastern cuisines.
Snacks including Appellation oysters, cured fish plates and anchovy toast will kick off the menu, with diners able to select a fish and team their choice with a range of veg-driven sides.
On the beverage front, the wine list will hero natural wine and a range of cocktails will also be on offer.
The takeaway menu will focus on fish boxes, which include a fish of choice, condiment and a salad or side, with the lunch box option heroing the venue’s hot smoked trout, salmon gravlax or tuna confit with a salad, crostini, pickles and house labneh.
Fish Shop will open on 21 December in the Sevenways precinct on Glenayr Avenue.
