This March, Giorgio de Maria (ex-121BC) and Pasi Petanen (Caf Paci) will present 12 collaborative wine dinners at Mecca in Sydney’s Alexandria.

Designed to celebrate the autumn harvest, the dinners will not just bring together the cuisines of Italy and Finland but also the unique wines in Giorgio’s stable with the highly acclaimed and original cuisine of Pasi Petanen, recipient of the 2015 SMH Good Food Guide's Innovation Award.

“I didn't want to do another pop-up after Cafe Paci but after meeting with Giorgio I was sold. He brings so much to the table it’s hard to know there to start. I want the food be like him, spontaneous, exciting, full of energy, sweet, salty, sour and bitter all at once,” Petanen said.

The menu will change each week based on what the pair find at the markets, but the primary focus will be on the Italian cuisine.

“I don't want to plan it too much,” said Petanen. “I would like to get nice products and cook, not over work stuff but simply cook delicious food.”

The wines will be chosen from de Maria’s collection and will be available for pairing with the five course menu, or by the bottle.

“It’s about wines that show uniqueness, that highlight the people and places behind it,” said de Maria, who co-founded Rootstock Sydney. “Wines that taste like the best food, pure, exciting, surprising and make you to want to cook and enjoy it with your best friends.”
