Pietro Gallus Estate in South Victoria will see the addition of a tasting bar this spring.
Considered a Grappa pioneer, Owner John Di Pietro and his wife Anna Gallo are bringing a taste of Italy to the hills of Warrandyte.
“We’ve always imagined creating a Tuscan villa in Warrandyte that combines the best of Italy and Australia,” says Di Pietro.
“Over the years, careful planning, building and planting has allowed us to create a mini Italy surrounded by bushland, which to us feels very much like ‘la dolce vita’ – the sweet life.”
The bar will open alongside an alfresco area, where patrons can sample estate-made Grappa, wine, spirits and beers overlooking the countryside.
Head Distiller Nathan Rigby has perfected grappa-making over the past six years, using both traditional and modern methods to create a vast artisanal selection.
There will be thoughtfully curated list of Grappa and spirits that will see Grappa di Prosecco paired with Grappa al caffé and Grappa di Moscato teamed with Limoncello classico and Limoncello crema.
A Warrandyte special will feature a flight of crossover gin and olive leaf vodka coupled with the estate’s Grappa Moscato.
The food offering will be matched with the drinks and cover locally sourced dark chocolate, dehydrated oranges and frozen grapes.
“We hope to see the Tasting Bar become a new favourite haunt for locals and visitors alike,” says Di Pietrio. “We look forward to introducing them to our estate-grown produce and artisanal Grappa at a bar with – in our opinion – the best views in Victoria.”
