The world’s first standalone Grey Goose bar Le Martini is opening today at Crown Melbourne.
The 34-seat bar will host a roster of internationally acclaimed bartenders, starting off with Dale DeGroff who is known for his work at New York’s Rainbow Room in the 1980s.
DeGroff’s debut martini menu includes the Harry’s Original inspired by the 1888 Harry Johnson martini; the Grey Goose Millennium dry; and the French-inspired Grey Goose Martinié Speciale.
“I wanted to show the evolution of the martini — from what was served in 1888 to the 19th and 20th centuries and paying tribute to the new millennium and so we’ve made that happen, all using the exquisite Grey Goose vodka, which has been my go-to vodka since I participated in the world release in New York City in 1997,” says DeGroff.
The Le Martini offering also includes a selection of classic and petit-sized martinis, alongside beer, champagne, red and white wine, and spirits.
Food-wise, guests can expect a bar snack offering by fellow Crown Melbourne neighbour Bistro Guillaume.
Highlights include whipped cods roe on a baguette; crab rolls; fresh oysters with mignonette; and gildas.

Le Martini opens today on the ground floor of Crown Melbourne and will operate from Thursday through to Sunday from 5pm.
