Guillaume in Paddington will have its last service on 30 December.
The current Hargrave Street lease has expired and chef and owner Guillaume Brahimi has decided not to take up a further option period, instead focusing on his Bistro Guillaume restaurants in Melbourne, Perth and Sydney, which opened in September this year.
Brahimi also operates The Four in Hand Dining Room in Paddington, and is culinary director for Crown Resorts nationally and culinary ambassador for Public House Management Group venues across Sydney.
“While I have loved the last three years at Guillaume in Paddington and it has been a difficult decision not to take up the further option period, I am happy with my decision to focus all my energy into my Bistros around the country,” Brahimi said.
“I am extremely proud of what my team and I have achieved at Guillaume – it is tough and demanding running a restaurant at that level, but I am excited for us to be able to focus on the Bistros and a few other upcoming projects.”
The restaurant will open for its normal trading hours through November and December.
